So what’s the recipe for success? We asked restaurateur and first ever Sandwich Pro winner Micheal Mallie. “If you use quality, you get quality,” he said.

In October 2008, Mallie, a native of Ireland, opened the doors to his contemporary California restaurant, Jack’s Prime — just as the economy was experiencing its downturn.

Armed with his love of sandwiches and quality ingredients, he showed no fear of the crumbling economy and opened his shop just outside of San Francisco. Today, Jack’s Prime is more popular than ever, dishing out approximately 470 sandwiches a day, the Wine Country Burger being its biggest seller.

The Wine Country Burger
Made with Laura Chenel goat cheese, cabernet/balsamic onions, sautéed mushrooms, mixed greens, tomatoes and 1/3 lb all natural Niman Ranch Angus Beef patty seasoned with Napa Valley herbs and Prime Burger Sauce, this is no ordinary burger. “The flavors come together and give people a sense of what it’s like to visit wine country,” said Mallie.

Jack’s Prime still manages to thrive in the declining economy because Mallie serves his food with a side of integrity. He focuses on the customer experience above all. Mallie explained, “We wanted to open a business that tries to do it right for everyone. We stand by the food we sell. There’s no cutting corners and we’re proud of that ethic.”
